Buffalo Chicken Sheet Pan Meal
Put Buffalo on anything and it’s instantly better. That includes a boring sheet pan meal! I could eat this bowl of veggies, potatoes, and chicken everyday because it’s roasted together with a yummy Buffalo sauce! Give it a try when you’re short on time for dinner!
Ingredients Needed
Chicken breast: If you prefer chicken thighs you can do that as well. Make sure they are cubed.
Potatoes: Use any potatoes you like. I used mixed baby potatoes
Cauliflower: One head, chopped up.
Broccoli: Again, one head, chopped.
Red onion: Add as much as you like per preference. 1/2 a red onion was perfect.
Buffalo sauce: I always use Primal Kitchen Buffal sauce. It’s made with avocado oil and it’s our favorite!
Honey: Add this to the Buffalo sauce to help caramelize the meat.

Serves 4-5
Ingredients
2-3 lbs chicken breast, cubed
24 oz bag of baby potatoes, diced
1 head broccoli, chopped
1 head cauliflower, chopped
1/2 red onion, chopped, 1 inch pieces
1/2 cup Buffalo sauce
1 TBSP honey
2 TBSP olive oil
Feta or blue cheese for topping
Green onions, for topping
Salt to taste
Instructions
Preheat oven to 400F. Lay tin foil on a large baking tray.
Layer the veggies on the tray and drizzle with salt and olive oil.
In a medium bowl, add chicken, Buffalo sauce, and honey. Mix well.
Layer the chicken over the top of the veggies and bake for 25-30 minutes.
Top with cheese of choice, extra Buffalo sauce, and optional green onions. Enjoy!
