BBQ Chicken Flatbread

If you’re craving pizza, then these are for you! They take less time to make than ordering take out pizza! I love that they have a lot of chicken on them for good protein and lots of veggies! They’re easily customizable too so everyone can pick and choose which toppings they want!

Ingredients needed

Mini Naan: These make the best flatbreads! But you can easily try a gluten free version, use wraps, or use bigger naan bread if you’d like.

Chicken breast: I actually prefer to cook my own chicken here. A quick substitute would be rotisserie chicken.

Mozzarella cheese: shredded works best! You actually won’t use much cheese for these.

Red pepper: One large one or two smaller peppers.

Red onion: Add as much of this as you’d like. 1/2 an onion was plenty!

Pineapple: This was truly the key for me! It brought the whole meal together. I used fresh but canned could be substituted if it was drained before.

BBQ sauce: Use your favorite! I used a Kansas BBQ sauce and it was perfect! Lean towards a sweet option.

Makes 6

Ingredients

  • 6 mini naan breads

  • 2 large chicken breasts (about 1.5 lb) diced

  • 2 cups pineapple, chopped small

  • 2 small or 1 large red pepper, chopped

  • 1/2 cup favorite BBQ sauce

  • 1 1/2 cup mozzarella cheese (more if desired)

Instructions:

  1. Preheat oven to 400F. Toss the diced chicken with BBQ sauce.

  2. On a large baking sheet, line with foil. Place the pineapple, pepper, chicken, and red onion on the tray. Bake for 20-25 minutes.

  3. Remove from oven and turn oven to broil.

  4. Assemble the flat breads. Place the naan on a baking tray. Layer with chicken and cheese. Top with pineapple, red pepper, and red onion. Drizzle with extra BBQ sauce.

  5. Broil until the flatbread gets golden and the cheese is melted. ~about 5 minutes.

  6. Remove from oven and enjoy!
