Chili Stuffed Sweet Potato

In my house, chili is always a fan favorite. I’m not sure why we love it so much, but I never get complaints when I make it. It’s so filling and satisfying! And now I found a new way to use chili! I made a basic chili recipe, stuffed a creamy, delicious baked sweet potato, and topped it with cheese. It is the perfect meal to prep ahead of time!

Ingredients Needed

Ground beef: I use 90% lean beef. If you want something leaner, you can always substitute for turkey or chicken.

Red pepper: One pepper, chopped.

Onion: A white onion is best here.

Fire roasted tomatoes: One small can is plenty for this recipe.

Bone broth: You can use regular chicken or beef broth but I always think bone broth makes it more savory.

Chili seasoning: Chili powder, chipotle chili powder, cumin, paprika, salt, black pepper.

Sweet potatoes: I try to get medium sized sweet potatoes so one is a serving. Some of them are so large that I wouldn’t be able to eat the whole thing for a meal.

Colby jack cheese: You can add whatever cheese you prefer. Cheddar or pepper jack would also be a good substitute.

Recipe

Makes 4-5 servings

Ingredients

  • 1 lb ground beef

  • 1 red pepper, diced

  • 1 onion, chopped

  • 15 oz can fire roasted tomatoes

  • 1 cup bone broth

  • 1 TBSP chili powder

  • 1/2 tsp chipotle chili powder

  • 2 tsp cumin

  • 1 tsp paprika

  • 1 tsp salt and pepper each

  • 4-5 medium size sweet potatoes

  • Colby jack cheese for topping

Instructions

  1. Poke each sweet potato with a fork and wrap them in tin foil. Place them in the oven at 400F and bake for 45-50 minutes until very tender.

  2. In a large pot, heat olive oil at medium heat and add in onion. Cook until translucent.

  3. Add in ground beef and add the chili seasonings. Brown the meat.

  4. Add the red pepper and fire roasted tomatoes. Lastly mix in the bone broth.

  5. Let the chili simmer for 20-25 minutes. Remove from heat.

  6. Cut each sweet potato open, creating a well. Scoop a generous helping of chili into the potato. Top with colby jack cheese. Put the stuffed potato under the broiler until the cheese is bubbling. Enjoy!
