One Pot Pesto Chicken Skillet

We all love a one pot meal. Less dishes means an easy clean up! So I loved making this one. It has some of my favorite flavors! Garlicky pesto, salty parm, and deliciously cooked veggies. From now on when I need a quick dinner, this is it!

Ingredients

  • 2 large chicken breasts (or about 2 lbs)

  • 1 bag 12oz frozen cauliflower rice

  • 1 large head broccoli, chopped (3-4 cups florets)

  • 1/4 cup almond milk

  • 1/2 cup Greek yogurt

  • 3/4 cup pesto

  • 2 cloves garlic, minced

  • 1/2 cup parmesan cheese, grated

  • 1/2 cup mozzarella cheese, shredded

Instructions

  1. Preheat oven to 425F.

  2. Dice the chicken breast into 1 inch cubes.

  3. In a large, oven safe skillet, heat 1 TBSP olive oil. Add in the minced garlic. Saute for 1-2 minutes. Add in the chicken. Salt and pepper the chicken and allow to cook on all sides.

  4. Add in the broccoli and cook for 2-3 minutes until the broccoli has turned bright green.

  5. Add in the cauliflower rice and mix well. (Cauliflower rice cooks fast so no need to wait for this to cook.)

  6. Add in the pesto, yogurt, and milk. Combine everything well and cook for another 2-3 minutes. Once everything is bubbling, top with the shredded cheese.

  7. Bake for 10 minutes until the cheese is completed melted and everything is bubbling.

  8. Remove from heat and enjoy!
