Weeknight 30 minute Chicken Stir Fry

I swear I could eat stir fry every night of the week. It’s so easy, so customizable, and so.dang.delicious. This is an easy recipe that you can whip up in 30 minutes! It’s packed with healthy veggies and good protein. Try this out when you’re in a pinch for a quick dinner!

Ingredients Needed

Chicken: I used chicken breast, but you can easily use chicken thighs as well.

Broccoli: This is one of my favorite veggies to add to stir fry!

Red pepper: Another must have veggie for a stir fry!

Mushrooms: I know this isn’t everyone’s favorite veggie, so substitute your favorite veg!

Basmati rice: This is my favorite rice to use, but jasmine rice would also be delicious! If you want to lower your carb intake, use cauliflower rice.

Soy sauce: This is probably what most people have on hand but you can substitute for coconut aminos or tamari.

Rice vinegar: This adds the perfect tanginess for stir fry sauce.

Hoisin sauce: This is in the Asian foods section in the grocery store.

Sesame oil: The sesame flavor is perfect for this sauce!

Ginger: Fresh ginger is preferred but ground ginger works as well.

Garlic: Grated garlic is easier than mincing it!

Recipe

Ingredients

  • 1.5 lbs chicken breast

  • 1 large crown of broccoli, chopped

  • 2 red bell peppers, chopped

  • 1 carton of mushrooms, chopped

  • 2 cups basmati rice, cooked

  • Peanuts, chopped, for topping, optional

  • Sesame seeds, for topping, optional

Sauce

  • 5 TBSP soy sauce

  • 2 1/2 TBSP rice vinegar

  • 2 1/2 TBSP hoisin sauce

  • 2 TBSP sesame oil

  • 1 tsp fresh ginger, grated

  • 1 garlic clove, grated

  • 1/2 tsp corn starch

Instructions:

  1. Heat a large pan and add 1 TBSP olive oil or avocado oil.

  2. Add diced chicken and brown each side on medium heat. Cook until chicken is about 70% cooked.

  3. Add in chopped veggies. Cook for about another 8 minutes until chicken is fully cooked and the vegetables still have some crunch.

  4. While the chicken and vegetables are cooking, make the sauce. Use a blender or immersion blender to thoroughly mix it.

  5. Pour over chicken and vegetable mix and cook for one more minute over medium heat until everything is coated in sauce.

  6. Spoon chicken and vegetables over cooked rice. Top with sesame seeds and chopped peanuts. Enjoy!
