Mediterranean Sheet Pan Salmon Meal

We all love a quick 30 minute meal. And what’s easier than a sheet pan meal? One pan to clean up? I’ll take it! I love this meal for all its delicious flavors. It really requires no work to make it taste super yummy. It’s packed with veggies, healthy fats, protein, and some yummy gnocchi for carbohydrates. This meal is also very customizable so if there’s something specific you’re not a fan of you can easily sub it out!

Ingredients Needed

Salmon: I used two filets here but you can easily make this a 4 person meal, add two more filets and some extra veggies!

Gnocchi: Use potato gnocchi! They get so yummy in the oven. If you want to make this meal but don’t have gnocchi, use potatoes! If you have cooked tortellini you could even use that! Just add it at the end and don’t put it in the oven.

Mushrooms: One container of baby bella are perfect. But use whatever you have!

Zucchini: One large zuke!

Red bell pepper: I used a large one.

Artichokes: 12 oz jar of artichoke hearts, I realize not everyone loves these. If you’d rather, you can substitute sundried tomatoes for some flavor!

Kalamata olives: 1/4 cup of chopped olives. Make sure they’re pitted

Garlic: 2-3 cloves, minced for both the salmon and the rest of the veggies and gnocchi. When you cook this with olive oil, it becomes like a garlic sauce.

Olive oil: We use a decent amount of this! It’s a garlic olive oil sauce to meld everything together.

Basil: Add this at the very end to round out the flavors! If you don’t have basil on hand but happen to have pesto, just add a TBSP of that.

Ingredients

  • 2 salmon filets

  • 1 package potato gnocchi

  • 1 zucchini, half moons

  • 1 package baby bella mushrooms, diced

  • 1 red bell pepper, diced

  • 12 oz jar artichoke hearts, drained

  • 1/4 cup kalamata olives, chopped

  • 2-3 garlic cloves, minced

  • 4-5 TBSP extra virgin olive oil

  • 2-3 TBSP fresh basil, chopped

Instructions

  1. Preheat oven to 450F. Line a sheet pan with tin foil.

  2. Add veggies, gnocchi, artichokes, and olives to the pan. Make a space for the salmon and place on the pan.

  3. Rub about 1/2 tsp of the minced garlic on the salmon with salt and pepper.

  4. Add the remaining garlic to the rest of the veggies and gnocchi and mix well.

  5. Add 4-5 TBSP of olive oil or until meal is sufficiently coated. Remember the olive oil will act as the sauce with the garlic!

  6. Bake for 15-20 minutes. (It will take longer for salmon to cook with all the veggies and gnocchi on the pan.)

  7. Remove from heat. Sprinkle with fresh chopped basil and enjoy!
